Bubbles and Squeak
3 tbs                       Bacon fat or oil
2 tbs                       Unsalted butter
2 cups                    Diced onions
2 tbs                       Minced garlic
1 tbs                       Minced ginger
1/2 tbs                   Red chili flakes
1 tbs                       Cumin
1 tbs                       Garam masala
3 cups                    Cabbage (green) or Brussel sprouts
4 cups                    Mashed potatoes
1/2 bunch             Cilantro
1 cup                      Sausage (optional)
1/4 cup                  Sour cream (garnish)
Heat the fat (oil) and butter in a cast iron skillet.  Add the onions and cook until they start to brown a little.  If using Sausage, add it now.  Add the Garlic, Ginger, Red Chili Flakes and cook for another minute or two.  Add the Cumin and Garam Masala and wait to smell the aromatics.  Add the cabbage and cook for 3-5 minutes. 

Add the leftover Mash Potato and mix well.  Spread out evenly this mixture in your pan and leave alone and moderate high heat until a crust begins to form on the bottom.  About 10-15 minutes on each side to crisp up the mixture.  It can be finished in the oven, if necessary. 

Cut out pieces or spoon onto serving plate.  Add a dollop of Sour Cream, and minced Cilantro. Serve hot.
